Ingredients for Cake:
- 1 ½ cup flour
- 4 eggs
- 2 tsp ovalette
- 1 tsp vanilla
- Grated rind from 1 lemon
- Juice from 1 lemon
- 1 ¼ cup castor sugar
- 1 cup Planta @ margarine @ butter
Steps:
- Beat margarine with sugar until fluffy (about 15 minutes).
- Add vanilla, grated lemon rind and juice. Beat for a while.
- Add eggs one by one and finally add flour.
- Bake at 150 degrees Celsius for 45 minutes.
Ingredients for Frosting:
- 125g of Cream Cheese softened at room temperature.
- ¼ cup of butter (about 2 tsp) softened at room temperature.
- 1 cup icing sugar
- 1 tsp vanilla
Steps:
- Beat together cream cheese, vanilla and butter.
- Slowly add sugar until it is thick enough to apply on cake.
For layer: canned lychees or any kind of fresh fruit or canned fruit (nak letak durian pun bleh Senah oi!!!) For decorating: chocolate rice and almond flakes
Steps:
- Cut the cake into two layers.
- Layer the bottom half with cream cheese frosting.
- Arrange the lychees.
- Put the other half of the cake.
- Layer it with the remaining cream cheese.
- Sprinkle some chocolate rice and almond flakes.
p/s: if you like sweet tasting frost, by all means just add more icing sugar. I have sweet tooth but I tend to halve everything sweet in my cooking. If you like more cream, double the ingredients for frosting.
